Bean to Bar to Bonbon

I had the opportunity to attend a conference organized via the eGullet Society for Culinary Arts and Letters on the subject of making chocolate. I learned a helluva lot and attempted to boil it down for this feature which ran in yesterday’s Frederick News-Post.


Believe it or not, I didn’t get to eat much chocolate while working on the story! I was only there for a few hours and had to depart before most of the chocolate confections had a chance to be completed.
